Non-Dairy Dessert for 1st Birthdays

Having a 1st birthday for your child at home means a lot of work. You'll have to keep in mind that some youngsters are lactose intolerant and may not be able to eat the cake and other bread items. Therefore , you'll need to cater some dairy free foods too. Here is a simple dairy free 1st birthday cake recipes that everybody can enjoy.

What you need for the chocolate cake recipe:

- Two and three quarter (2 3/4) cups of rice flour

- One (1) cup of cocoa powder

- One tablespoon of baking powder

- 1/2 tablespoon of salt

- One and a half (1 1/2) cups of dairy and soy free shortening (you'll find this at any store)

- Two and a half (2 1/2) cups of sugar

- Four eggs

- One and a half (1 1/2) cups of almond milk or rice milk

- Quarter (1/4) cup of maple syrup or mixed fruit jam

- 2 teaspoons of vanilla extract

Method:

- Pre-heat the oven to 350F or 180C.

- Sift together the rice flour, cocoa powder, baking powder and salt in a bowl.

- Mix the sugar and shortening together using an electric blender for three minutes (you will get a fluffy mix at the end).

- Beat the eggs in a new bowl and whisk 'til fluffy.

- Add the eggs to the sugar-shortening mix and mix well to get a viscous mix.

- Add the vanilla extract and maple syrup to the mix, along with the almond milk.

- Add the dry ingredients to the mix and blend well using an electric blender on maximum speed. There should be no lumps in the mix.

- Pour the batter in the cake tin (greased) (if you are using a silicone mold then there is no need to grease).

- Bake in the oven for thirty-five (35) to forty (40) minutes 'til the top is firm and the cake springs back when touched.

- Remove the cake from the pan and allow it to cool at room temperature.

To prepare the dairy-free frosting you need:

- 2 cups of powdered sugar

- Half a cup of dairy free margarine

- Quarter (1/4) cup of almond milk

- 3/4 cup of cocoa powder

- 1/2 teaspoon of vanilla extract

Method:

- Use an electric blender to mix the margarine and sugar together.

- Add the almond milk, cocoa powder and vanilla extract and let the mixer do the job to make spreading more uniform.

To decorate the cake:

- Slice the cake in two parts horizontally.

- Mix some cocoa powder with warm water and gradually drizzle the cocoa liquid on the bottom layer and the top layer. This will keep the cake moist.

- On the bottom layer, spread about half (1/2) of the frosting.

- Place the top layer on the top and cover with the remaining frosting on the top and sides.

- Refrigerate for a few hours before serving.
