Delectable Cake for the Lactose Intolerant

Dairy and soy free recipes aren't found on most youngsters' favourite list. However, for children who are lactose-intolerant, it's important to ensure that you present them with a birthday cake which they can enjoy. Below is a straightforward and appealing 1st birthday cake recipes which is dairy and soy free and which you can bake at home using simple ingredients.

On your shopping list:

For the chocolate cake recipe:

- Rice flour - two and three quarter (2 3/4) cups

- Cocoa powder - one cup

- Baking powder - 1 tablespoon

- A pinch of salt

- Dairy and soy free shortening - 1 1/2 cups

- Sugar - 2 1/2 cups

- Eggs - four (4)

- Almond or rice milk - one and a half (1 1/2) cups

- Maple syrup or mixed fruit jam - quarter of a cup

- Vanilla essence - 1 teaspoon

For the dairy free frosting:

- Powdered sugar - two (2) cups (you can use confectioner's sugar as well)

- Dairy free margarine - 1/2 cup

- Almond milk - 1/2 cup

- Cocoa powder - 3/4 cup

- Vanilla essence - 1/2 teaspoon

For decorating the cake:

- Piping bag

- Mixed fruit jam

- Edible silver balls and colored chocolate gems

- Edible sugar toppings

Cake recipe:

- Heat the oven to 350F.

- Grease a 9 inch cake pan and put aside.

- In a deep bowl, stir the eggs and add the sugar and shortening. To mix it well, use an electric blender until all of the ingredients are mixed and you get a fluffy, soft texture.

- Then add the maple syrup, vanilla essence and almond milk, and mix well on low speed. You'll get a slightly frothy mix.

- In a separate bowl, mix the flour, baking powder and salt, and leave aside.

- Now add the flour and baking powder mix to the prepared wet mix and blend on medium speed until you get a cake batter of dropping consistency.

- Pour the batter in the greased cake tin (you can add some roasted almonds on top if you like).

- Bake in the pre-heated oven for thirty five (35) to forty (40) minutes.

- Take the cake out of the tin and let it cool on a wire rack while you prepare the frosting.

To prepare the frosting:

- Over a double boiler, melt the chocolate chips together with the dairy free margarine.

- Remove from the heat, then add the icing sugar and allow it to dissolve.

- Add the almond milk, vanilla essence and cocoa powder and mix well. If the frosting is too thick then add a touch more almond milk.

To decorate and assemble the cake:

- Cut the cake in 2 even layers horizontally.

- Spread the frosting over the bottom layer of the cake and place the other layer on top of it.

- Cover the whole cake with the remaining frosting.

- Place the mixed fruit jam in the piping bag and decorate the cake.

- Top with chocolate gems and edible silver sugar balls in any design you like.

- Arrange the edible sugar toppings (which all youngsters love) all around the cake.
